Tasting Note: Dark, dense ruby color. On the nose, black fruits with notes of graphite and roasting and a slight chalkiness in the background. Initially closed, with remarkable complexity and structure on the palate. Beautifully integrated with good acidity and a hint of chalkiness on the finish.
Food Matching: When mature the wine is a delicious accompaniment to poultr y, game birds and, by the same token, with white meat and black truffles.
Grape Variety: 100% Pinot Noir.
Climate: Mild climate. Soil: Shallow topsoil over limestone outcrop. Harvest: Manual.
Vinification: Hand-picked at optimum ripeness, the grapes are then sorted, 100% destemmed and put into vats. Fermentation, in contact with the skins, lasts between 20 and 25 days. After racking, pressing and settling, the wine undergoes malolactic fermentation before being aged between 14 and 18 months in barrel. The wine is then racked before being bottled, unfiltered. Elevage 100% in new oak barrels.
