Harvest The grapes are hand picked in the early morning hours while temperatures are still low, carefully selected without leaves, sorting out any
damaged or rotten grapes on site, then transported in small containers."
Vinification Grapes are first inspected for quality control, then sulfited during crushing and destemming. Dry ice is used to cool the crushed grapes
to 13-15 C. The juice is seperated from the solids. After 48 hours, the clear juice is racked off, followed by inoculation of the ready grape must with a suitable yeast strain. Alcoholic fermentation takes 20-25 days, followed by
racking and sulfiting. After fining with bentonite and cold stabilization, the wine is ready for bottling."
