Description
Tasting Note Elegant and delicate wine with hints of black fruits, truffle and spices on the nose. On the palate it is intense with grilled almond and oak undertones accompanied by a nice minerality. The tannins are delicate and silky which gives a very nice character to this wine.
Food Matching Fatty fish, white meat, poultry, grilled red meat, cheese(citeaux, brillat-savarin, reblochon, vacherin, mont d'or).
Grape Variety Pinot Noir.
Terroir/Vinification
Climate Vougeot 1er Cru Clos de la Perrière Monopole.
Soil Well drained and stony soil.
Vinification Selective sorting at the winery, 30 to 50 % of full grapes. Slow and soft vinification in thermoregulated tank, using only natural yeast from the grapes. Extraction by manual punch downs and in tank for 21 to 28 days.
